Oat Cookies

Take a break. Take an oat cookie. Try this recipe for a healthy snack in between.

These might be the best oatmeal cookies ever. They are full of healthy nuts and seeds, the best balance between sweet and a little sour from the berries. They are super easy and fast to make. Just be careful not to burn them. And then enjoy!

What you need

  • 250 gr oats (the coarse ones)

  • 175 gr self-rising flour

  • 5 gr salt

  • 150 gr coconut oil

  • 200 gr date syrup

  • 90 gr honey

  • 75 gr cranberries or raisins (or other dry fruits)

  • 65 gr coconut flakes

250 gr mix of your choice of seeds and nuts, for example:

  • 75 gr roasted almonds

  • 75 gr walnuts

  • 50 gr pumpkin seeds

  • 50 gr flax seeds


How to make it

Melt the coconut oil.














Add the syrup and honey.














Crush the nuts and add the seeds and cranberries to the oil and sweetener mixture.













Add the salt to the flour and mix with the oats. Add to the mixtures of the nuts, oil and sweetners and mix well.












Firmly press the mixture into a form about 1 cm high. Make sure that the mixture is nice and compact so that the cookie doesn't immediately fall apart once baked. This shouldn't only happen once you take a bite from your delicious cookie.













Bake the cookies at 190 °C for 12 minutes. Check on them regularly so that they do not burn. They are ready when they are nice golden brown.
